How to Make Homemade Huckleberry Jelly

Ingredients

  • 1-quart or 4 cups of huckleberries
  • 4 cups of sugar
  • 4 tablespoons of water
  • 3 tablespoons of powdered fruit pectin
  • 1 tablespoon of lemon juice

Instructions

  • Rinse the huckleberries and put them in a heavy saucepan. Follow it by adding sugar and water and bringing it to a boil over medium-high heat. Make sure to stir it constantly.
  • When it begins to boil, reduce the heat and simmer for about 3 to 4 minutes. Again, stir constantly. The mixture may be foamy, and that is normal. When the sugar is completely dissolved, add the pectin and lemon juice and simmer for another 1 to 2 minutes.
  • Remove from the heat and mash until you reach the desired consistency. Fill the jars, leaving about a 12-inch gap at the top. Cover it and let it set. If you want to use these jars for long-term storage, make sure the jars are sterilized and the lids are washed. Tighten the edges, put the hot jam in the hot jars and process in a water bath for 5 minutes. Then, carefully remove the rings and let them sit for 24 hours before removing the rings and storing them.

Notes: If you are making jam with less than two cups of huckleberries, it is usually best to go the pectin route as smaller amounts are more prone to burning.
